Editorial Review for Williams Smoke House – by Citysearch Editors
In Short
The Williams family works its magic on the lowly rib without the aid of modern shortcuts. A peppery dry rub is applied by hand, followed by four hours of slow, careful grilling over a post-oak fire. The end result sports a dark, crusty exterior while remaining moist and tender close to the bone. Other offerings include barbecued brisket, sausage and chicken. Save room for a helping of Mrs. Williams' homemade peach cobbler, a wickedly sweet version of this traditional Southern dessert.

I wanted to try Williams' since I had read about it in Texas Monthly. I usually go to Thelma's but felt like a change. I had to wait behind someone who was having a leisurely conversation with the man taking the orders, nothing to to with food. I finally had the chance to order, the only sides were standard pototo salad (looked commercial) and ditto for cole slaw. No fresh veggies to go with the ribs. My order of ribs was very disappointing and the sides horrible! I will never go back.

I have read about this place and decided to give it a try. Maybe I got there on a bad day. The brisket was overcooked and dry. Could be that that is the way the locals like it. I prefer my que to be moist and tender. Williams is overated in my opinion.
